Important article! We are what we eat and THEN some. The THEN some is mostly chemicals we cannot pronounce. Actually maybe more chemicals than actual food sources. Plastic making its home to a place inside you. YIKES! As always, thank you!

Thanks for this! We can improve our lot in the U.S., but it takes work. As you point out, our bodies have evolved to be more healthy with a plant and complex starch based diet. As John McDougall would say, just look at the enzymes in our mouths. They are there to digest starches, first and foremost.

In my mind the whole “gluten free” craze was simply a deflection for industry to hide the effects of high doses of glyphosates in wheat. The chemical is typically used to desiccate or dry out wheat to allow earlier harvests, which reduces the risk of losing a harvest to summer storms. Treating a crop at harvest will lead to higher residuals in the food supply.

How you get around it is to commit to doing your own cooking and carefully sourcing ingredients. Focus on cooking whole grains and legumes that are organic or sourced from a place that does not practice chemical desiccation. Some decent places are the organic farms raising ancient and heritage wheat such as einkorn or emmer. Beans from New Mexico family farms are simply raised with more care. Organic oats from Canada through something like the One Degree project. Rice, well it’s hard to beat Japanese rice even if it’s not organic.
